Grape variety

60 % Grenache blanc, 30 % Marsanne, 10 % Roussanne

Origin

The grapes come from two different terroirs:
- North of Montpellier (Aniane, Montpeyroux, Pic Saint Loup, etc.)
- Vineyards that overlook the Mediterranean Sea, around La Clape.
The limestone soils (calcareous Gargasian marls and red Mediterranean soils dating back to the Barremian stage of the retaceous epoch) are not overly productive, limiting vine growth and
promoting ripening of the grapes.

Vinification

The grapes are destemmed, pressed, and then vinified in stainless steel tanks or in barrels. The temperature is maintained at 18°C.

Ageing

Ageing: 85% stainless steel tanks 15% new French oak barrels for 6 months.

Tasting notes

Pale gold in colour with transparent, crystalline gradations and silver tinges.
Starts off round, rich, fresh and fruity on the palate. Lovely, complex flavours (toast, anise, mint, garrigue herbs, citrus fruit, honey). This wine exudes the freshness of sea air.
An elegant, well-balanced white wine with great personality and impressive length.

Wine and Food

Enjoy as an aperitif or with a meal alongside fish terrines, seafood salads, marinated raw fish, sushi, steamed fish, snails in garlic butter, spaghetti with clams, veal stew with tarragon, and goat's cheese served either cold or hot.

Awards

Serve between 8 and 10°C.
